Oven-Fried Veggies

Raw vegetables*
2 eggs
4 tablespoons melted butter
1 cup dry bread crumbs
1/2 cup grated Parmesan cheese
Salt to taste
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon celery seed


Prepare raw vegetables* such as: whole mushrooms, cauliflowerets, broccoli florets, green pepper strips, and zucchini or summer squash strips. Carrot strips may also be done, but cook or steam them until crisp-tender first; then proceed as recipe directs.

Beat eggs with melted butter in a small deep bowl. In another bowl, combine remaining dry ingredients. Dip each veggie in egg mixture; then roll in crumb mixture to coat well.

Arrange on Pam-sprayed cookie sheets. Chill 20 minutes. Preheat oven to 400 F. and bake veggies 15 to 20 minutes or until a light golden brown. (This method has far less calories than the deep-fry method, and just as delicious!)
