Walnut Veggies
1-1/2 cups sliced carrots
1-1/2 cups fresh green beans, cut in 1" pieces
1/4 tsp. salt
1/2 cup coarsely chopped walnuts
1/2 tsp. fresh grated lemon rind
2 Tbsp. butter, melted
1/4 tsp. seasoned salt
Combine carrots, beans and salt in saucepan. Add water to just cover veggies. Bring to a boil, then reduce heat to a simmer. Cover and cook until veggies are tender (25-30 minutes).
Saute walnuts and lemon rind in butter until walnuts are golden brown, stirring constantly. Drain veggies, stir in walnuts and seasoned salt, mixing well.
