Fried Yams
(Serves 4)

4 fresh yams, peeled and sliced
1T olive oil
Chives


In a frying pan, heat olive oil on medium heat. Place a single layer of yams into oil and cook until soft. Turn yams over and repeat. Remove yams from heat, season with salt and pepper and a sprinkling of chives.


American Fried Yams

4 med. Louisiana yams
1/4 c Shortening
1 tb Butter
2 tb Sugar


Parboil yams in skins or use left-overs. Peel; slice in rounds about 1/8-inch thick.

Melt fat in large skillet. Brown slices quickly on both sides. Turn off fire; add butter; sprinkle with sugar.
