Zucchini Bake

4-6 medium zucchini, sliced 1/4"
1/4 cup olive oil (or enough to cover bottom of skillet)
1 tsp. oregano (dried)
1 tsp. basil (dried)
1 tsp. salt
3 cloves garlic, diced
2-3 tomatoes, peeled, deseeded and chopped
1 medium onion, chopped
8 oz. cheese (jack or cheddar) grated


Preheat oven to 350 degrees F.

In skillet, saute onion. Add oregano and basil. Add sliced squash, garlic and salt. Cook until zucchini is tender, then add tomatoes. Stir and cook down.

Place in a 9x13" casserole and sprinkle with cheese. Bake about 1/2 hour or until cheese is melted.

NOTE: You can top with a mixture of fine bread crumbs and Parmesan cheese.
