Golden Zucchini Pancakes

3 medium zucchini, shredded (4 cups)
1/2 teaspoon salt
1/2 cup finely chopped onion
1 tablespoon butter or margarine
2 eggs slightly beaten
1/4 cup all purpose flour
1/8 teaspoon pepper
Cooking Oil


Place zucchini in colander. Sprinkle with salt and set aside for 30 minutes. Squeeze as much of the liquid as possible from the zucchini with your hands.

In medium skillet, cook onions in butter or margarine over medium heat about 3 minutes or til tender, stirring occasionally.

Transfer zucchini and onions to large bowl. Stir in eggs, flour and pepper.

Pour cooking oil into clean medium skillet to depth of 1/8 inch. Heat over medium high heat.

Drop slightly rounded tablespoons batter into hot oil and flatten to 3 inch diameters with back of spoon. Cook over medium-high heat til golden, turning once (2 to 3 minutes on each side). Remove the pancakes with slotted spatula and drain on paper towels.

Add more oil to skillet if needed and repeat til all batter is used.

Note: Can substitute yellow squash. Can also add 1/4 cup shredded carrot to batter. Can drizzle with your favorite cheese sauce – or can use seasoned tomato sauce.
