Zucchini Quiche
Crust:
2 cups flour
1/2 tsp. salt
3/4 cups cold butter, cut into ½ in. pieces
3 Tbs. cold water
Quiche filling:
3/4 cup flour
1 tsp. salt
3/4 tsp. fresh ground pepper
1/3 cup grated Swiss cheese
1 cup (4 oz) grated cheddar cheese
1 cup (one medium ) diced onion
2 1/2 cups shredded zucchini
5 eggs beaten lightly
Preheat oven to 450ºF
Add salt to flour; cut in butter, with pastry blender or food processor until it resembles coarse meal.
Add water a small amount at a time and stir or process until dough holds together in a ball. Form into a smooth ball; roll on lightly floured surface. May be wrapped and refrigerated till ready to roll.
Roll into 13 inch diameter and fit into springform pan. Press against sides and flute. Prick crust with a fork. Cover crust with wax paper, fill with dry beans or pie weights to keep crust flat. Bake 15 minutes.
Remove from oven fill with quiche filling. Return to oven, and immediately turn temperature down to 350º F.
Bake 1 hour 10 minutes to 1 hour 30 minutes or until quiche is brown and firm to the touch.
Filling:
Mix flour, salt, and pepper, stir in cheeses, onion and zucchini, add eggs and stir until well blended. Pour into prepared crust.
Makes 6 servings.
