Zucchini Cheese Casserole

3 or 4 zucchini squash, sliced 1/4" thick
2/3 cups cottage cheese (reduced fat)
1/2 cup egg substitute
2 oz. reduced fat cheddar cheese
2 slices white bread crumbled
1/2 tsp. dill
Salt and peprer, to taste
Vegetable coating spray
Butter spray


Cook zucchini in small amount of boiling water until tender-crisp. Drain. Pour into a casserole dish which has been sprayed with the vegetable coating.

Combine the cottage cheese, egg substitute, cheddar cheese, dill, salt and pepper. Spread over the zuchini. Top with the bread crumbs and spray with the spray butter. Bake at 375 for about 25 minutes or until lightly browned.
