Zuchini Pancakes

Zucchini Pancakes 

1 medium zucchini, shredded (about 2-3 cups) 
1 small onion, shredded 
2 large  eggs 
1/2 cup flour 
1/4 cup shredded/grated Parmesan cheese 
2 Tbsp olive oil
1 tsp. margarine 


Combine ingredients and allow to sit for about 15 min. 

Heat saute pan (black, cast iron pan is best) and add 1 tsp. margarine.  Drop 2 Tbsp zucchini batter at a time into saute pan and fry until lightly
browned.  Turn and saute until lightly browned, adding margarine as needed.

Remove to serving platter and keep warm until all batter is used. 

Serve with sour cream.
