Best Roast (Meatless Loaf)

2 large eggs
1 Tbl. soy sauce or Worchestershire sauce
1/2 lb. medium firm tofu, drained, patted dry and cubed
1/2 Cup chopped walnuts
2 Tbl. cooking oil
1-1/2 Cup chopped onion
3/4 Cup chopped celery
2 Cups sliced fresh mushrooms (or 10 oz. can)
1 envelope dry onion soup mix
1/2 tsp. whole oregano
1/2 tsp. ground cumin
1/2 tsp. dried sweet basil
2 Tbl. grated parmesan cheese
1-1/2 Cups dry bread crumbs


Preheat oven to 350 degrees.

Process eggs, soy sauce and tofu in blender until smooth. Add walnuts. Process until walnuts are ground.

Heat cooking oil in frying pan. Add onion, celery and mushrooms. Saute until soft. Turn into bowl.

Add blender ingredients. Add remaining 6 ingredients. Mix well.

Pack into greased 8x4x3 inch loaf pan. Bake in 350'F oven for about 45 minutes. Let stand for 10 minutes.

Turn out onto serving platter and cut into 10 slices.
