Rice Stroganoff

Rice Stroganoff

2 teaspoons margarine
1 cup sliced mushrooms
1/4 cup scallions
1 garlic clove, minced
3/4 cup chicken broth (or, in your case, substitute
3/4 cup vegetable broth)
1/4 cup dry white table wine (or equal amount water)
1 tablespoon fresh parsley, chopped (optional)
1/8 teaspoon salt
Dash pepper
4 ounces uncooked long-grain rice
1/4 cup sour cream (skip for very strict vegetarian)


In 2-quart saucepan, melt margarine. Add next three ingredients and saute over medium heat till mushrooms are tender, 1-2 minutes. Add broth, wine or water, parsley if used, salt, and pepper.

Bring to a boil. Add rice, stirring to combine. Reduce heat to low. Cover pan and cook until liquid is absorbed and rice is tender, 10-15 minutes.

Stir in sour cream.
