Curried Vegetable Burgers

1 pound potatoes
1 egg yolk
1 onion chopped
2 tablespoons oil plus extra for frying
1 clove garlic, crushed
2 small leeks, finely chopped
1 stalk celery, finely chopped
2 carrots, finely chopped
2 teaspoons curry powder
2 tablespoons fresh parsley, chopped
Milk, optional
Fresh bread crumbs, for coating
Salt and pepper


Boil potatoes in salted water until tender, then drain. When cool enough to handle, peel and mash them with egg yolk.

Meanwhile, cook onion slowly in oil until softened. Add garlic, leeks, celery, and carrots, and continue to cook, stirring occasionally, until vegetables are tender. Stir in curry powder for 1 minute.

Mix curried vegetables and parsley into potatoes. Add a little milk if mixture seems dry. Add seasoning, and form into 6-8 patties.

Coat patties in bread crumbs, then fry in oil for about 3 minutes on each side until golden.
