Spicy Tofu

Spicy Tofu

1/2 pound fresh tofu
1/4 cup red onion, sliced thinly
1 green onion, sliced diagonally
1/4 cup mint leaves
2 pounds assorted raw vegetables (cabbage, green beans, zucchini, broccoli, carrots, etc) cut in serving size pieces
2 tablespoons fish sauce
2 tablespoons lime juice
1/2 teaspoon toasted rice
1 tablespoon roasted ground chiles
Green lettuce leaves


Cut tofu into 1/4-inch dice. Set aside on paper towels to drain for about 15 minutes.

Heat a wok and add the tofu without oil. Stir-fry until the tofu is heated through, but not crisp. Add all the remaining ingredients except the lettuce and vegetables. Mix thoroughly.

Line a shallow serving bowl or deep platter with lettuce leaves and pour the mixture on top. Serve at room temperature with assorted vegetables.

To toast rice: Place in small, dry skillet. Toast over medium heat until golden. Let cool; grind in spice grinder or blender until fine. Don't be tempted to leave it out as it holds the seasonings on the tofu.
